Alright here is my take(I put mine in line combinations as well, mainly because I have too much time on my hands):
RoC:
Forwards
Hull-Gretzky-Esposito
Lindsay-Messier-Howe
Gainey-Yzerman-Clarke
Mahovolich-Trottier-Clarke

Defence:
Orr-Coffey
Shore-Robinson
Park-Pronger

Goalies:
Dryden
Sawchuck
Hall

Obviously you can't really debate the top 5 or 6 forwards. The last few I changed out (Lindsay, Clarke, Mahovolich, Gainey and Trottier) I feel added some toughness and defensive ability and gets rid of Gilmour, I mean come on Douggie over anyone of those five...I guess thats what you get from a Leafs fan. As for defence the biggest omission on your part was Eddie Shore who won more Hart trophies than any other d-man. In net I agree with your picks but would put Dryden ahead of Sawchuck. Sawchuck probably had the better career but only because it was longer. Dryden retired young but I would say was better in his prime than Sawchuck in his. But either one would do really.

Quebec:
Forwards:
Geoffrion-Beliveau-M. Richard
Dionne-Lemieux-Lafleur
H.Richard-Malone-Bossy
Perrauly-Carbonneau-Cournoyer

Defence
Bourque-Potvin
Harvey-Pilote
Savard-Lapointe

Goalies:
Brodeur
Roy
Plante

As for the Quebec side, not alot of disagreement with you except I think you missed big time on leaving out 3 forwards, Geoffrion, Bossy and Malone but other than that most of the tinkering I did was just around the edges. Again I would put Brodeur in net over Roy but I know I may be in lonely company on that one and that is a debate for another day.

As for who would win, I agree it would be the rest of Canada but I don't think it would take 7 games. Well Quebec does have stronger goaltending all three of RoC goalies can steal a hockey game or two which is really all you can ask for from a goalie in a 7-game series.
RoC has a clear edge at defence with the top two offensive-defencemen(Orr and Coffey) and top two defensive-defencemen(Robinson and Shore) of all time. Between Shore and Robinson on defence and Gainey and Yzermen up front you would probably have the best PK of all time to. Quebec has solid defence throughout but comes up short on the raw skill of the RoC on the back end.
I would also give RoC the advantage up front. Between Gretzky, Esposito and Hull lighting it up on the first line and Messier-Howe-Lindsay bulldozing through anyone on the second line I don't see how Quebec could match up. You are right that Quebec would have more flair but I still don't see it as enough.

I would take RoC in 5.

I really think that Quebec vs. RoC is an unfair matchup, I think a tournament between Quebec, Ontario, the West (BC, AB, SK, MB) and the Atlantic would actually be best. I think the Atlantic would be the worse by far with only one player (Sid) on my RoC from the Atlantic. I think Ontario would probably win due to their strength on defence (5/6 from my RoC team) but Quebec and the west would definitely be able to hold their own.
